Touch is a big big deal. People spend a fortune on vintage gear trying to emulate other people's touch.
One of my most interesting experiences was recording the pianist having the best touch I've ever encountered. I offered him free time at the Quicksilver studio but the only "piano" we had was a Juno-60 with a MIDI adapter feeding a Kurzweil box. There was zero velocity sensitivity in this setup.
Expecting the worst, I was floored to hear his incredible touch coming right out of the monitors. Turns out a lot of touch is actually timing. We also quickly learned that a sequencer isn't nearly accurate enough to capture touch but fortunately we'd recorded his live performance to the 24 track.

Wonderful drums and great drummer and lovely room. I got stuck at Chamber stereo file .... damn ... damn ... i realy loooove that Chamber sound! Must put together a "chamber room" to my studio in the near future Thanks John for allowing us to take part of the lovely drum recording, top notch! /H
