My current Apogee Symphony is AES/SPDIF...I had been using the ADAT out of my former units to go out to my Hearback for monitoring purposes. Right now, I'm just using the Analog outs to go to the Hearback. I'd love to make it a little simpler, though. Can you go AES to ADAT? Are there cheapish conversion boxes?

There's no way adding a format conversion is "easier" than just using analog. What's the issue with the analog you're using now? are the number of channels limited somehow?
Z-Sys makes all forms of format converting boxes...but, IME, digital connections in general are more limiting and generally a PIA to keep everything in sync than simply putting copper analog connection in and never thinking about it again. No matter what sample rate pieces run at... Right now, the only digital connection in my studio is the RME SPDIF to the DAC. This is down from some years ago having 8ch ADAT to and from the KSP8...SPDIF to and from the Lexi...and 8ch ADAT from the VI host to the Akai...so, I mean, it's not like I've not been down the "all digital interconnect" road. Keep it ones and zeros....you know...nice in theory.
