I bought an upmarket tube mic. U67 styled mic. It has a nice tube, a nice transformer and some caps and a long skinny thing but a lot of space in the inside. Most of this is soldered off the end of the capsule. Does this seem normal? Very subjective question I know but I thought it would have more stuff inside. I know the "proof is in the pudding" so to speak but I dont know quite what I was paying for?

Like buying a bag of chips and the damned thing is half air! Actually, it looks fine. They put the caps and resistors right at the terminals and such so what you're not seeing is the PCB normally found in mics. There's a number of ways to lay things out. So long as it's quiet, it should be alright if everything is well placed and secured.

Hello, a tube microphone circuit is pretty simple. You only need three resistors to get the tube to amplify and another three resistors to provide the correct capsule polarization voltage. You only need 3 capacitors if its a Cardiod only microphone and an output transformer.
The most crucial component is the capsule. No matter what tube or capacitors you use a 3 micron skinned capsule will sound more strident or "edgy" than a 6 micron skinned capsule. Also, the polarization voltage reaching the capsule is critical.

Upmarket should be built with the finest Vishay bulk foil resistors and silver foil polypropylene/polystyrene/teflon caps. Of course, you will not find that stuff in most so called upmarket mics.
