I've been too lazy to try and wall fish...just thinking about hooking up about 75-100 ft. of 25 ft XLR cables. Is there any issue with this? Probably would need it to carry phantom too.

No problem, when I think of the cable runs I have seen on some remote broadcasts a hundred seams like nothing.

Once a year i'd daisy chain 100 and 200 footers together for a 600+ foot run across a sports arena for broadcast, through the most vile mess of AC wires and spilled sodas, only problem was the network stealing your wire if they got to it first.

nearly everything you have heard from me, has passed through 30meters (over 100ft) of multicore cable.. I have a stage box in my studio and the cable runs all the way around the wall from one end to the other, then stick a mic cable on the end of that
go for it..

There should not be any significant issues connecting four 25-footers in series to make 100'. Make sure the xlr's are clean and in good shape. Also, that at least the female xlr's shells are tied to shield. Else there will be ~3" per xlr of unshielded line exposed to RF/EMI. The better solution is simply a single 100' home-run. No wire interruptions or points of (minimal) degradation.

if you're gonna take the time and effort to fish 2 then you might as well go ahead and get a 4 input wall box. It will allow you to cut a 2" hole in the wall that will ultimately be covered by the wall plate, plus you have 4 channels instead of just 2.

100+ foot runs will increase cable capacitance and that may reduce the tops a bit. If you use star quad it's more noticeable.
I use Belden 9182 LAN network cable for longer runs, 70% propagation delay, 8 pf per foot stray capacitance, 150 ohm impedance. Back in 1994 I brought a couple of 100 foot runs of that down to Paramount Picture's Hollywood foley building. They patched that in, ran it up the stairs into the control room from the pit and they used Audio Upgrades High Speed mic preamps.
Instant smiles across the room as every one heard the difference, much more open sonics with those modified Neumann KM-81 shotgun mics they use. They then punched holes into the walls and wired the entire building with that cable. That was right after they did all the 1994 earthquake repairs. You can hear the change-over on that 1994 Star Trek movie where the Enterprise crash lands on the jungle planet. That entire crash scene foley was done all analog with a lot of tree branch breaking, pitch shifting and overdubbing.
Another alternative is the 110 ohm AES/EBU balanced digital transmission cables. Those also have far less stray capacitance than any audio grade cable and they have better top end details after longer runs. Mogami makes a 9 run AES digital snake, many have used that for wiring patch bays and outboard for less losses.
