I've seen these in Tape Op a of couple times. What sort of flavor profile are we looking at here? And is there a noticeable difference in 500 vs 19" version?

Yes, they sound similar but aren't the same for obvious size reasons. The 575 packs a full channel strip into one 500 series slot. Handy tracking tool and I use them all the time. The hpf is a favorite as is the before or after compression(see saw)eq built into the module. You can also sidechain an eq of your choice, so you can use eq before and then after compression stage. Be sure to blow the pic up and take a close look at the first of it's kind,released several years before others, it is the first channel strip in 500 series. The MPA 685 is a stereo mic preamp on the clean side but not sterile. when you push the input stage, you can get just the right grit you are looking for to make a vocal punch. It is great on acoustic instruments as well as about anything you want to record. It's fast with lots of headroom and really looks and sounds great beside my vintage gear.

Thanks, Randy, for the comments. The 500 version has the same pre-amp circuit as the rack mount. The rack version has higher voltage rails, so you get a touch more headroom, but you can still blow the doors off your control room, even with the 500 module. That's what you get with carefully optimized gain staging. We implemented a non-published mod on a version that includes the output transformer, and you can get more than +30dBu with the 500 version, but that's a story for another day....So the sound is as Randy describes, lightly colored, with the ability to dial in some grit if you need. It's a good complement for a wide selection of mic types, and both the MPA575 and MPA685 can partner up well with the mics without overtaking their flavor.
The bonus on the MPA575 500 module is that you get the comp which is ideal for doing light compression, and you get the high pass filter and see-saw filter. All you need to capture a track, and perfectly positioned to work with a number of different downstream options for surgical compression or equalizing.

The one thing I forgot to mention that is very nice is there is a switch in the back to make it line level. That way you can use the hpf, eq and compression stages at mix time. A real swiss army knife for pro audio.
