Can you explain how you’re setting up your headphone mix on the Apollo? I’ve been using Apollos since they came out (probably like 15 years ago at this point) and I have never once, out of hundreds and hundreds of artists recorded, ever had someone have an issue with latency monitoring through the console app correctly. I would bet money there’s something else funky going on. Or maybe you’re just crazy sensitive and screwed 😂.
First thing to check, makes sure Input Delay Compensation is “off” in the Apollo console app, that can make a difference (and I’m guessing you’re probably not recording multi mic drums or anything). Second, what sample rate are your recording at? If it’s possible and not impractical, try setting the sample rate at 96k. That will drop the latency even more. Third thing, if you’re only using one mic, try flipping the phase on the mic and see if that helps. I’ve had some singers complain about the “phases” thing, it’s because your brain is trying to process and combine the signal coming from the headphones as well as the “bleed” from your voice in the room and the vibrations inside your head from speaking. I’ve never heard a difference when I’m singing or performing, but I have had a few singers tell me it made a big difference when I flipped the phase on the mic.
Try all of that before you make your life more complicated. Tell your ears to buck up and stop being so sensitive 😂

I have only ever monitored as you describe for the past 8 years and it is beautiful, does require additional investment but is worth it to me. The investment is in preamps with dual outputs, one output is routed to converter for recording to DAW, the other is routed to your playback system.
I use Pueblo Audio JRs and, as the second output, the aux out, is -6 dB and I prefer record and playback level to be much closer, I route the aux out to another Pueblo JR which has a minimum add of around 7 dB.
Gordon preamps are available with dual outs Grace Design has a model with three outputs I am pretty sure Millenia has a model with dual outs.

The Metric Halo ULN-8 and LIO-8 boxes actually have a DB-25 send output that is essentially a mult from inputs 1-8 (that is, prior to any A/D conversion). I imagine some other boxes have something similar. That way you can go straight to an analog cue mixer with literal zero latency (or time of electrons to get to the end of the wire...).
