So Logic 11 still does not use more performance cores, apparently the older m1 max, still outperforms the m2/m3.
This is max performance so maybe doesn’t matter for smaller less cpu intensive projects.

Is that still the general consensus with other DAW's as well? The power of a single core is really the thing.
Somehow I thought that was only true for plugin chains but that with large track numbers the multi-core still helps. TBH I haven't paid much attention to it but I was thinking about upgrading my Mac Mini M1, maybe it doesn't matter.

I don’t think that is the point, he has been examining which daws best utilize the the new m chip performance cores.
Logic is about middle of the road.
He has also been examining whether the m2 and or later chips outperform the m1, and as the m1 typically utilizes more performance cores it can outperform an m2 chip.
Unless, you are getting system warnings with your current set up: I’d say you are fine.
