So I'm trying to set up MIDI virtual ports in the IAC Driver on my Mac, and it's only allowing me one channel per virtual port in the "Connectors for" section. It "should" have 16 channels available to pick from there, but I can't figure out why it's not allowing me to choose. It's just basically grayed out and limited to one channel (1 MIDI in, 1 MIDI out) for each virtual port. Any ideas?

I believe those are virtual connectors or cables, not the individual midi channels on a given virtual connector itself. If you look at your newly created bus in the receiving software you should see 16 midi channels available on that virtual connector. For example, I have IAC Bus 3 with one in and one out connector just like in your image.
If I use Bus 3 (I named it Zebra here) as a midi input in bitwig I can choose any of the 16 available channels.
The sending application or device would define the midi channel being transmitted over Bus3 (Zebra) here

I want to be able to change it in the IAC Driver though. That's what I'm asking about. I want to figure out why it's not allowing me to change it there. That “connectors for bus X” dialog box is not the midi channel. The virtual connector is just a cable, it doesn’t define the midi channel. The channel is defined between the sending and receiving device or application. The "connector for bus X" boxes become active and ungreyed for something like a usb midi interface with multiple physical midi connectors in my experience.
