And perhaps more importantly what do you not use them for?
I suddenly find myself with four different SW brands. Never used the HW or SW before.
Thanks all!
Cheers, Geoff

Ruletec plugin used on the master bus to bump the lows and highs a little.

Drum bus, sometimes bass, lead vocal parallel, mix bus (almost always) and randomly elsewhere. Never used them on backing vocals and seldom on guitars.

EQP what everybody else said.
MEQ is fantastic on electric guitars.

Vocals that need a bit of 'richness,' bass sometimes, sometimes drums... I was into the IK for a while, but decided not to deal with their install thing, not I use the UAD, both legacy and upgrade.

Shh don’t tell anybody but a good solid state Pultec is a damn good general purpose sound shaping utility/ console EQ.

EQM-1S3 on the mixbus (10k shelf is wonderful, 70hz low end). Considering a pair of MEQ 500 series (Jack Douglas Edition) for guitar bus and a pair of 500 Series EQPs for Lead Vocal and Bass.

As much praise as they get I don't always reach for one even when available. They are unique though and sometimes just feel perfect.
I would most likely use them on vocals and snare, sometimes bass. Once had one on a mono 1176 running kick/snare/bass in parallel and for that mix nothing could have been better.
Hardware usually, sometimes software.

Hardware wise I have a bunch of time on the Tube Tech version of the EQP. Love it on lead guitar (mid push) and lead vocals (air).
With the Ruletec I use it all over the place, but especially master buss and vocals.

The pultec is again one of those very distinctive recognizable eq’s. I guess you either rely on their character or not.

I was using it on kick (like an A Designs Em-peq or the Pulse Pultec eqp500x. However, when I got my Iron Age V2, I have no need for anything else on "kick." Also great on snare!

One UNUSUAL use :
On Electric Guitars that were recorded with MOTU mic pre's at 16 bit and were thin and anemic. Fantastic guitarist, but poor engineering. Sad, but true. I use the 800 freq on the EQP-KT - almost all the other EQP's don't go up that high. Works like a charm and brings back a lot of the fullness that the motu pre's killed. That's my main usage for the the KT versions.

I love the V2 on drums. I’m usually V2 on kick and snare, Pultec on FOK mic. I’m not a huge fan of Pultec on the mix bus, but love it on drums, bass, vocals. I much prefer something like the V2 on midrange instruments and the mix bus.

It's far from my go-to but a Pultec has definitely helped me get some nice amp sounds.

Here's a pretty informative comparison of several 500 series Pultec clones.

If you peruse the Chambered Audio new Baxandall EQ 500 unit, further down you find the most useful of all EQP applications: The symmetrical boost and cut in the low end. That tight focusing and giving you more apparent low end whilst simultaneously cutting your audio real estate usage in half, is the greatest of all EQP applications. This is helpful

But I’m surrounded by so many pultecs of different brands. Hmmm…. I’ll make use of them more.

According to Bob Clearmountain, he used this EQP-1A snare trick on almost every mix:
Low frequency to 100 hz, and low freq boost about number 3. High frequency to 5k, broad bandwidth, crank the boost all the way to 10.
Sounds cool.
