Just curious what is the best way to use a summing box that does not have pan controls. Stereo outs are really the only option, correct?

Lots of conversion, stereo stems, stereo panned singles or usin just hard left right and center.

Panning in the DAW to stereo pairs. Some boxes also have mono buttons to have a couple of things like lead voice and bass center.
