This really piques my curiosity as to various different capsules, how they're made and differentiate between each other... and why can't I use an M7 or K47 capsule in a U87??!!

I'd like to know the differences (physical, electronic and practical including frequency response) between all the major capsule types!! M7, M8, M9, M11, K47, K67, K87, CK12 etc.

Hope this is not inappropriate for this thread John. Feel free to delete if it is:
I had never used a U87ai, but was a partner for 6 months with a guy who had a U87ai. I'm not a mic guy or modder or anything, just an honest opinion from someone lucky enough to use it to know what it really sounds like. Like anything else expensive that you have access to in the gear world, you tend to use it a lot and there's a bit of confirmation bias at first. But after time to reflect, I didn't REALLY like it on anybody, and for $3,000.00 that's just not good enough. Perhaps he had a faulty one, though there was no discernible noise, buzz or anything else. Even so, out of curiosity I'd like to hear another one. Needless to say though, it won't be one I buy.

I've used an 87ai before and I actually thought it was pretty damn good. A little too forward in the mids for my personal tastes, but I didn't hear the bright top end everyone complains about.

Agreed about the forward mids and I didn't hear a bright top end either, but warmth in the lower mids was missing. Perhaps I didn't work with proximity enough to get what I wanted.
