Using a "channel listen" in Cubase, with a UA plugin, you're gonna get the latency of the UAD Satellite, for example, not just the latency of your DAW.
My Pro-L 2 does this too, on master bus, so I have to turn it off when I'm tracking a software instrument.
If you are using a Thunderbolt UA satellite you can use "live track" mode or whatever they call it to get low latency. The FIrewire satellites can't do this.
I'm not sure how it works with Apollos. I have recently moved on from Apollos. One of the big reasons was the uselessness of the Console plugin tracking... I just never needed that. I don't need to "commit" to plugins.
Unison preamps I will miss a little bit, but overall, I'm pretty happy to get away from the Console/Apollo stuff.
I am very happy now with fast native interfaces and the UAD satellite for the plugins that I still love.

If you're direct monitoring you're not getting the latency of the DAW. The only reason I can think of to not direct monitor with an Apollo is if you're tracking a virtual instrument, and there are workarounds for that. I'm not aware of any system that is better for latency than Apollo, so I'm always confused when people bring up latency as a negative for the UAD system.
