What would be the benefit of having 16 channels of conversion in my home studio Other then for a summing mixer, if I only record 2 tracks at a time, An would 8 channel would work best?

depends on your work flow.
If you're planning on either A) recording a full band or B) mixing with a lot of outboard equipment. Then 16+ all day.
Doing stuff in the box, Only doing over dubs. 8 is fine.

As I think you might know, it really depends on your workflow. If you're not using 8 now, then why would you plan on 16? If you go with something like MOTU, the modular setup is easy to expand later through AVB without having to rip it all out and start again.

If you have to ask you don’t need it.

If you have to ask you don’t need it. True. If you need more you already know why. Some folks haven't figured out why the why though Eric....

My question would be : why stop at 16? Anything less than 24 isn't enough. And 32 gives extra channels for aux returns!

There is a certain advantage to leaving things connected in a home studio where you might not have a patchbay and you don’t need to clear down after every session. But if you are not doing drums you are still unlikely to need more than 8.

Typical (my) needs for tons of A/D. Leaving a drum set up and miked all the time, leaving a bunch of synthesizers / instruments hooked up to separate inputs all the time. As well as a permanent vocal channel, guitar, bass, acoustic guitar, etc.

Plus, even though I do have a patch bay, being able to use PT to switch and patch things makes life so much better.

If you're not recording drums and you're mixing in the box, you can keep it simple. You could get away with a 2 channel unit for that. Things get more complicated, and arguably more fun when you start recording drums, incorporating outboard and mixing outside of the box. If and when you decide to do that, you'll know you need more channels. Until then, don't sweat it.
