Front of kit mic 6-8 feet back is a beautiful thing. I will use that mic for the majority of the sound and keep it mono if I can.
To get that open image the cymbals are as important if not more so than the shells, which won't be balanced without good cymbals and playing. With some careful tuning, you can get a good sound out of ambassadors and many older shells, a standard acrolite or something a little more expensive and deeper. Some drums have a really narrow sweet spot though.
But the older cymbal alloys have a much better sound for recording. Maybe they're not made for abuse and being heard over a PA, but like the older more delicate shells, they have a better tone. I'm way pickier about cymbals myself.
Charlie Watts used the same Paiste 602 for almost 40 years. Shows how much finesse he had.
BTW a lot of hard hitting drummers don't play like that in the studio.

I'd agree that bad cymbals, especially bad hats, will fuck up a record faster than bad shells. Drums can always be tuned to at least sound passable, but the shitty cymbals can sound like someone wiping their ass with a chainsaw.
I'd love to own a really good pair of hats. But even then, most drummers just seem to love bashing the shit out of them.

Yeah hihats are the worst.
Putting a ring of keys on the stand between the hats is a good dampening trick I learned from Albini's posts. Takes the edge off a little without sounding dull like taping cymbals. It really works, unless you need a miracle.
But otherwise basically the thinner the cymbal, the better in those situations. They are less loud and also pitched lower.
The nice thing about the Zildjian Kerope (great crashes) and Paiste 602 reissue cymbals (interesting toned hats and amazing 20" crash) besides sounding good for recording and especially this style, is that you can get them with dealer insurance.

Wanted to add - a Reslo RBL ribbon mic was a common all around used mic in the UK in the 60s. They even used them for kick, turned sideways or placed way low to avoid blowing the ribbon.

I don't know that anyone ever did such things, but recently did a rockabilly band wanting semi-period sounds and used a pair of Samar MF-65's about top of kick height, out front, one FT side and one S side, checked in mono for phase coherency. Added a mono Sennheiser MKH406 OH. Got a natural stereo room sound with width control separate from the other live elements in the room.
