Edit: Here is the final product.
I've got a session tomorrow for a live, in-studio production. Hired film crew is coming in to handle the video and I'm running the audio. 1 performer playing acoustic guitar, 1 female vocalist. I want to try being unobtrusive for the video production aspect, but want a great sound as well.
Pop act, not folky vibes.
I'm thinking of either a single or pair of BeesNeez SDC's close on the guitar and a Telefunken M80 for the vocal. I'll also have my usual Vanguard V44s set up across the room in mid-side.
Anything else that I should consider? I assume a LDC on the vocal will have bleed issues.
Also, I expect that they probably haven't spent much time rehearsing, so I'm not expecting them to blend their own volume well like a bluegrass band would.

Love the idea, but don't have a matched pair of multipattern mics, other than my ceiling mounted stereo mic. Also, worried about their voice/guitar balance.

I actually meant M/S...could you use it as a compliment to mix in to get a real stereo taste?

The M80 is an excellent mic for the application you are describing. An LDC will have bleed but it can be pleasant and useful. Both U87s and U89s have beautiful off-axis sound like a KM84. The consideration here is how it looks on camera. Do you want it to look live performance or in-studio? If it's supposed to look in-studio, then use an LDC. What do you have on hand? Do you have your Heiserman H47 tube yet?

The bleed is only an issue if the room is horrible, or if she can’t sing and will need tuning. You could do figure 8 on the vocal to really narrow the field and null the guitar. A good dynamic isn’t necessarily a bad idea though for something like this.

Since you don't have to worry about looking at the audience, don't assume they need to face the same direction. I've done things like this and put the performers at a 90º angle to one another. So one performer had a figure 8, and the other a cardioid to take advantage of the nulls.

I would either get a handle on the clients visual expectations or have multiple setups standing by, ranging from best sounding to least visually intrusive.
I would not be shocked to have a video crew show up in a recording studio still expecting to use shotguns and lavs. Then the question becomes: who has final say?
