You too? I wonder how many others out there seek out the originals. I’ve been watching HD needle drops on YouTube as reference latley.. Just search a song and “vinyl”, lots of hobbyists out there have expensive setups. It’s hit and miss, sometimes its terrible, others it’s mind blowing and soul-restoring that something not the norm can be appreciated. And it’s not just the original LPs, the reissue vinyl sometimes do improve things slightly, but mostly in the case of vinyl it seems imo..
And yeah! I think for 2020 that Beatles remaster is something new and exciting. I bought the HD download of Here comes the sun and have been using it as a reference. You know... 50 year old recording as a reference lol... but he really did amazing job. Did it right somehow.

I never look at LUFS. I usually end up around -10dB to -8dB RMS. If you can't hit higher, check your sub frequencies. There's usually a lot less below 80Hz in pro mixes than people think. Same here.
