Also - it could be that some of these are so rolled off on the top due to age, that I associate it with being “smooth.” Maybe they aren’t as smooth as they are “un-detailed”...but not sure I believe that. I’ve used those mellower ones and you add top end and they are just fantastic.

Mullard for me. Last night I put the NOS Mullard Bowie recently provided me into the ADK Z-251 I'm demoing. While ADK sells it stock with a Mullard and it sounds really nice, there's definitely a noticeable improvement in smoothing out my own voice with the NOS from Bowie. Since this has come back around the horn, I thought I'd add a bit from that 2019 experience. I ended up buying the Z-251 at the time (now gone), and eventually demoed the Upton as well. The Mullard in the Upton was a great suggestion from JK. I did find, however, that a Telefunken 12AX7 in the Z-251 brought that mic very close to the Upton with the stock EH tube, confirmed by several guys here via my samples. So the Tele, for me, ended up being a better fit in the Z-251 than the Mullard. The Mullard, by the way, made its way to our good friend hadaja for him to use in his Upton.
