Is using something like this...MOGAMI digital cable 3080...OK for transmitting audio or is the capacitance "too slippery"? Thanks.

I use a lot of Mogami 2552 AES cable, thin and easy to work. Used for general XLR interconnects. The best one is the 3173 AES cable. Good for over 1000 feet of transmission, it's a specialty cable.
It's rather thick like the Belden 9182 LAN network cable. It has 18 awg conductors, very thick and also good as a speaker cable. It has the lowest losses of any AES digital cable and sounds very nice. It makes one heck of a 20' mic cable. At $1.20 per foot, it ought to be. Get some from Redco and try it.
