I find the Fabfilter plugins mostly easy to use and simple because they do a good job with their interfaces. ProQ is really intuitive, for me.
I also find most of the UAD plugins easy to use, but of course they are almost all hardware emulations, so that makes sense.
These days I think I use more hardware than plugins, though, so I am mostly using things like reverbs, tape echos, soft synths/sampling synths, and EQs in the box.
I guess I'd say I find ITB pre-instrument EQ to be the most advantageous, since you have basically unlimited track count worth of EQs. For that I tend to choose Fabfilter or something like UAD Helios or a Pultec Plugin if I want a specific sound.

Instant vibe and tonal shaping: The Kush Omega plugins N, A, 458A, and TWK.
They do the thing I love which is easily dirty up a digitally-captured sound that doesn't have a ton of 'tude on the way in and gives it all a little more tonal shape. One knob plus input/output knobs if you want to keep that stuff level on the way in and out.

Trim plugin for sure! I often put one before and after a hardware insert. Ha!!!! Yeah, come to think of it, it's my most used plugin too. LOL
Today my wife told me that she sees someone else.... but this one made me laugh loud.....

It's gotten to the point where people are just naming plugins. I'm sort of thinking there's a lot of pretty darn simple plugins out there, with the complex ones being the exceptions.
My definition of a "simple plugin" is maybe one, two, or three paramters at the most.

Some of my favorites: Softube Tonelux Tilt: Really loving this one lately. Very powerful for quickly brightening sources, never seems to sound harsh. NI Transient Master: Probably the most musical transient designer I've tried. Izotope Ozone Exciter: This one's definitely a sleeper. I often prefer this to EQ in many cases. Brainworx Refinement: I basically put this on everything. IK VC 670: One of my favorite Fairchild emus. Great on the stereo bus. Sonimus Satson: I don't actually use this as a console emulation, I just really like the filters. RVerb: It just works.

I like to get the source tones to fit together, correct mics, move the mics, track through the hardware stuff I need then use a few plugs to tighten things up.

I've never used it, but I just watched a tutorial on it. I wouldn't call it a plug-in in a traditional sonic sense. It doesn't change the waveform in any way, right? It just changes the relative position of the fader if I'm understanding it correctly. It does fit the criteria of 'simple,' that's for sure.

It does fit the criteria of 'simple,' that's for sure. Pro Tools. And you're right, though called "trim" it's strictly just about adjusting the gain of the channel you instantiate it on. My primary use for it is gain staging how I like into my outboard gear, and as such, it's definitely on of my most used plugins. I like to keep my outboard gear in it's "sweet spot", and then use a trim before going into my gear via hardware inserts to gain stage properly. Same deal coming back into PT. I'll use trim to get the channel into the right gain staged spot I want it.

Massey THC & Tape Head. THC is so good on bass.
Soundtoys Little Plate is shockingly good. Been digging Radiator more and more lately too.
UAD EMT140 and Valhalla Room are both easy to dial in.

Cubase has I/O gain trim built in to their External Effect plugin. Kind of nice, essential really.
